broiled tilapia with a ginger, coconut and curry...
in this household, tilapia is the fish of choice. it is the IM’s fault, i have eaten more tilapia since i met him than my whole life before that… and i grew up in a caribbean island hahaha! it seems that lately when i cook fish, it is more often than not, tilapia. and i am ok with that, it is definitely a yummy fish. so, when i had craving for coconut i knew that the perfect pairing...

chicken and mushroom casserole!!
this is sort of a pantry dish, easy weeknight dinner. i have to be honest, when i cooked this i did not have high hopes for it. when i served it to the IM he surprised me with one of the most fantastic responses. he said it was “the best of these kind of dishes you’ve ever made!”. yup. a great casserole!
by the way… for my vegetarian friends, just double the mushrooms...
