cous-cous salad!

i love making cous-cous. not only because it has a really fun name, don’t you just want to smile when you say cous-cous?!, but also because it is so easy to make and so versatile. 

this salad is very refreshing and perfect for the summer.  it can be made with any vegetables you have; i just used what i had in the fridge.  i made some fish to go with it as well, but to be honest, i was happy eating it on its own… straight out of the container, while no one was watching shhh!! don’t tell anyone!

so here is what you’ll need for cous-cous salad!

INGREDIENTS:
1 cup of dry cous-cous
1 cucumber
a handful of parsley
a handful of mint
2 medium (or one large) tomatoes - not too ripe
a few springs of scallions
olive oil
3 lemons
salt & pepper

INSTRUCTIONS:
add one tablespoon of olive oil to one cup of boiling water.

add the cous-cous, cover and take off the heat

chop up a handful of mint. i feel that the more mint added the better. it makes for a more refreshing salad.

chop up a handful of parsley.

yay! parsley!

take the cous-cous out of the pot to cool down and fluff with a fork. 

keep chopping up the vegetables and the fruit, because tomatoes are fruits. did you know that? 

the scallions…

the cucumber…

and the tomatoes.  add everything to the bowl with the mint and parsley.

mix them well.

add the cous-cous and mix well. 

drench with plenty of lemon juice and season with salt and pepper.

put it in the fridge for about 30 minutes to allow the cous-cous to completely cool down.

i made some fish to go with it

but let’s be honest, the star here is the cous-cous! look at all those colors!
