
yesterday was really cold in new york. it is definitely a sign of the end of summer. although fall is one of my favorite seasons in new york city, the quickness in which fall is arriving is making me miss summer. i made these s’more brownies to stay in the summer mindset. im not quite ready to let go just yet! the combination of brownies and s’mores make for a gooey, messy, sweet and awesome dessert!
disclaimer: i did not grow up in the states. i grew up in dominican republic. as a result i had not tried s’mores until my junior year of college. we did not do s’mores in dominican republic when i lived there. i have maybe had s’mores 3 times in my life but nonetheless, the idea of s’mores will always remind me of summers, camping and bon fires. also, because i have not had enough experience with s’mores i had forgotten that marshmallows catch on fire. read on and you will see why i will never forget that fact from now on.
and, without further ado, here it is, the recipe for s’mores brownies!!!
INGREDIENTS:
3 cups of graham cracker crumbs
1/4 cup of sugar
1/4 tsp of salt
3/4 unsalted butter
1 box of brownie recipe + ingredients needed to get the box ready
1 bag of mini marshmallows
whole graham crackers - break them into pieces

INSTRUCTIONS:
start by greasing up your pan.

next, mix the sugar, salt and crushed graham crackers.

melt your butter.

add the melted butter to the crushed graham crackers. make sure to coat all of the graham crackers with the butter.
pour the graham crackers onto your greased pan. try to spread them out evenly.

while the graham crackers base is baking, prepare the brownies according to the box instructions.

just try not to lick all the batter.

spread the brownie mix over the graham cracker based. try to make it as even as possible.

and bake the brownie mix according to the instructions on the box.

next, cover the cooked brownies with the mini marshmallows. make sure to cover the whole brownie surface.

then place them in the broiler and bake the until brown. i should have taken my brownies out once they looked like this:

really. i should have. but i did not. i was feeling confident and put them back in. and did you know what happened? (of course you do!) they caught on fire! i had totaly forgotten that marshmallows can catch on fire. yeeeeea….
this week seems to be the “i messed up this dessert i worked so hard on by burning/melting it”.
i freaked out and swatted some of it with a kitchen towel and then took a picture. because if i am one thing, it is a food blogger. an honest blogger.

yup.. that is a bit of fire on them still.
i cleaned up the burnt parts. i was not about to be defeated. i wanted to have smores brownies, so i was going to have s’mores brownies. i figured if they had any burnt flavor, it would just make them taste closer to real s’mores.

so, repeat the process and add more marshmallows.

bake them until they are a little brown. again.

i was too scared to bake them longer so one side was more burnt than the other. i just made sure all marshmallows were melty.
cover the marshmallows with graham cracker quarters.

hmmm… s’mores brownies!

cut into squares and enjoy!

this definitely reminded me of camping and summer nights. the perfect treat to keep summer going, even if indoors.

it is definitely not the easiest dessert to eat. it can be messy with all the melty marshmallows.
