
last week we got a package in the mail all the way from ireland. it was a pizza cutter the irishman’s sister sent to him for his birthday. after him dropping many not so subtle hints i made pizza. i decided to make deep dish pizza to get the most use out of our new pizza cutter.
after some online and cooking book research i came to the conclusion that the dough for deep dish pizza is only different from regular pizza dough because it needs corn meal. so that was easy enough.
here is is, the story of when i made deep dish pizza!
INGREDIENTS:
1/2 tsp sugar
1 cup of warm water
1 pkg of active yeast
2 1/2 cups of all purpose flour
1/2 cup of yellow cornmeal
3/4 tsp of salt
2 tbs of olive oil

INSTRUCTIONS:
start by dissolving the sugar and yeast in the warm water. let it rest until it is foamy.

once foamy add the corn flour, salt, olive oil and 2 1/4 cups of the all purpose flour.

knead using the dough hook until the dough can does not stick to the sides of the bowl.

next, pour about 2 more tablespoons of olive oil onto a metal bowl.

add the dough and move around to coat with olive oil.

cover and let it stand in a warm place so it grows. this should take at least an hour.

once your dough doubles in size punch and knead a few more times.

spread the dough onto a cast iron skillet allowing for about 2 inches of dough to come up the sides.

layer the cheese onto the bottom of the dough.

next, drain your filling and add on top of the cheese. make sure to drain it as much as you can so the dough does not become soggy.
i made a sausage and tomato filling for this pizza.

layer more mozzarella cheese on top of your filling and sprinkle with parmesan cheese.

bake on the bottom of your over at 400º for about 10 minutes or until the crust is golden brown and the cheese has melted.

look at all that melted cheese!!
next, sprinkle some fresh basil on top of the pizza for freshness.

it worked great when cutting up a slice of this massive pizza.

the finished product is messy but absolutely delicious!
the irishman said the basil added “a very nice freshness and lightness to the pizza which balanced well the whole meal”. i am not making that up. if he keeps this up he might have to become a food critic. hahaha!
