brown sugar and pumpkin spice cookies!

as soon as it starts getting cool, i love to start baking. last year i baked cookies to give out as presents during the holidays. i never took pictures of the process and never posted them. i have decided that this year i will start posting those recipes early so you can see them on time for holiday cookie baking! 

the first recipe is for these brown sugar and pumpkin spice cookies.  these are the easiest cookies i have ever baked. low effort and high reward! 

INGREDIENTS:
1/2 cup of butter
1/4 cup of dark brown sugar
1/2 teaspoon of pumpkin pie spice
1 1/4 cup of all-purpose flour
a pinch of salt
2 tablespoons of granulated sugar 

INSTRUCTIONS:
start by creaming the butter. make sure your butter is at room temperature once you start cooking. it will make the creaming process easier and faster and will result in overall delicious cookies. 

once your butter is creamy (about a minute), add the salt, brown sugar and pumpkin pie spice. 

beat everything until combined. use a spatula to remove any sugar stuck to the sides. 

next, add the flour slowly to the mixture and beat until combined. 

line a baking sheet with parchment paper and add a dollop of cookie dough onto it. place the cookies about 2 inches apart. 

coat a cookie press, or in my case the top of a clean spice bottle, with cooking spray and then coat it with the granulated sugar. press your cookies down with it.

bake your cookies at 325º for 15 minutes, or until golden brown.

let them cool on a wire rack before eating them and enjoy!
