
hi there, sorry about not posting on friday. i have been sick with the flu lately and the only think i have been doing is sleep any chance i get. i am so grateful that i am finally starting to feel better. now all i have left is a strong cough but i am taking plenty of medicine to get over it soon.
i fell down with this flu on thursday afternoon. it was the craziest thing, i was at work all day and then i took the subway to go meet my friend jen for a drink. my health deteriorated rapidly on the subway ride over. by the time i got to jen’s office (about 20 minutes from my job) i was shaking with a fever and my whole body ached. obviously, our drinks were cancelled; by the time i got home and got under the covers i was burning up with a fever and knew i was going to be sick for a few days. so this is why i did not post on friday. i cooked this recipe on wednesday, after a trip to chinatown for fresh produce, this was my planned recipe for friday. so i bring it to you, today: red snapper in a tomato sauce!
INGREDIENTS:
1 medium white onion
2 garlic cloves
2 sprigs of scallions
2 sprigs of parsley
1 tbs of green olives and capers mixed
1 tsp red pepper flakes
1/2 tbs dry thyme
1/2 tbs dry rosemary
salt and pepper
1 tbs olive oil
1 can of whole peeled tomatoes
1lb of red snapper fillets
juice of 1 lemon

INSTRUCTIONS:
start by chopping up the onion, scallions and parsley and garlic.

heat up the olive oil in an oven-safe skillet and cook the onions until they are translucent.

add the garlic, parsley, capers, olives and scallions.

mix in the red pepper flakes, rosemary and thyme.

cook the spices and onions mixture for about a minute and add the tomatoes.

break down the tomatoes to incorporate them to the sauce.

add the fillets, skin side down and cover partially with the tomato sauce.

bake at 350º for 8-10 minutes or until the fish flakes easily.

once your fish is out of the oven, sprinkle it with the lemon juice, serve over white rice and enjoy!

the flavors of the tomato, thyme and rosemary go very well together and complement and bring out the taste of the red snapper very well.

the whole dish takes about 20 minutes from start to finish, which makes this a great weekday meal. this method is great for any other white fish fillet, but i really felt like cooking some snapper.
