secret recipe club: pork chops with balsamic peppers!

hello! how was your weekend? did you do anything exciting?

my weekend was great, met up with some friends and cooked a ton of food. food and friends, what else can a girl ask for, right.  i am very excited about this post.  this post is my first contribution to the secret recipe club!

Secret Recipe Clubthe SRC is a community of bloggers. each month we get an assigned blog and we have to pick one of their recipes and make it at home. we can make changes to the recipes if we’d like; the idea is to treat this as a cookbook or any other recipe we find online or otherwise.

my assigned blog was kelly’s eat yourself skinny.

kelly’s blog is super cute and it is packed with a ton of great recipes. it was very difficult to choose a recipe to replicate.  while reading her blog i came across this post where she said the post she was most proud of was her recipe for pork chops with balsamic peppers. right then, i decided that was the post i had to replicate. if it was good enough for it be deemed the post kelly is most proud of, then it was good enough for me to make :)

i am so glad i did, this was a delicious recipe and oh so easy and quick to make! i did not make any changes to the recipe as it was pretty great in it’s original form.  

so, here we go. here is the recipe for pork chops with balsamic peppers!

INGREDIENTS:
4 center cut pork chops
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 tbs extra virgin olive oil
1 1/2 tsp chopped fresh rosemary, divided
3 garlic cloves
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
2 tsp. balsamic vinegar

INSTRUCTIONS:
i started by getting my computer to the kitchen to able to follow the instructions right there.  

my supermarket only had bone-in center cut chops, so that’s what we ate.  

here we go: start by cleaning your pork chops. season them with the salt and pepper. 

heat up the olive oil in a heavy skillet.

and cook your pork chops for 7 minutes.

chop up the rosemary. 

i love rosemary!

chop the peppers into 1 1/2 inch strips. 

i love how colorful this recipe is!

kelly said you could use orange or yellow peppers so i used both.

chop up the garlic. 

at first i thought that 3 cloves of garlic was going to be too much, but then i thought to myself… too much garlic? never!

alright, after 7 minutes have passed, turn the chops and add 1 tsp of the rosemary. 

and the garlic. 

and finally, the bell peppers. 

cook the chops and peppers for 9 minutes. 

once the chops are cooked through and no longer pink drizzle the balsamic vinegar. 

add the remaining rosemary and serve. 

i love the fact that this was such an easy dish to make and was packed with flavors. 

the rosemary and balsamic vinegar go really well with the pork.

i will definitely go back to kelly’s site to get more recipes and hope you do too.
