yuca patties with fresh rosemary and cheese!!

i am very excited about today’s recipe. this is one of those really simple recipes that is perfect to use when you want to impress someone. yuca, cassava in english, is a delicious root vegetable.  i have been eating yuca since i was a little girl. we mostly ate it boiled but it can be fried or baked as well. yuca is sometimes added to soups and stews as well. in dominican republic, it is most often eaten boiled in chunks with cooked red onions and rotisserie chicken. but yuca is a versatile vegetable, you can even make yuca tacos!

after i saw the recipe for yuca tacos i had a sudden craving for yuca. i did not want to make yuca fries or simply boil it. i kept thinking about which way to cook this yuca it came to me: i should make yuca patties! yes, yes i should! so i did. and here i share the recipe for you: yuca patties with fresh rosemary and cheese!!

INGREDIENTS:
1 - 1 1/2 lb yuca
2 eggs
1 tsp chopped rosemary
1/8 cup parmesan cheese
1/8 cup romano cheese
1/4 stick of butter
1/8 cup cubed sharp cheddar
salt & pepper 
1/2 tbs olive oil 

INSTRUCTIONS:
yuca has a waxy and tough skin, it can be difficult to peel at times. everyone seems to have their prefered way of peeling yuca. this is mine:

slice the yuca and turn it on the flat side. using a sharp knife peel the skin. 

easy and gets the job done. 

cut the yuca into cubes. 

and boil in water with salt. the yuca should take about 20 minutes to cook. it will be ready once you can easily pierce it with a fork. 

once your yuca is cooked, drain the water and add the butter.

mash in the parmesan, romano and pepper. 

whisk together the eggs. 

at this point i felt i was missing something for the patties. while looking in the fridge i saw i still had fresh rosemary. 

and some nice cheddar cheese. 

so i chopped up the rosemary and added the cheddar cubes to the yuca puree. oh yeah! 

now we are ready. make your patties and flatten them using your hands. 

heat up the olive oil on a skillet or flat pan. 

coat the patties with the eggs and place on the hot pan/oil. 

cook them for 3-5 minutes on each side and serve hot. 

wow, you guys… these. are. so. yummy. 

the rosemary and cheeses go really well with the slight sweetness of the yuca. 

the cheddar chunks were a nice surprise when biting into the patties. this recipe was a complete success.
