pantry dinner: sze’ spam fried rice!

happy december everyone! can you believe a whole year has gone by so fast? crazy, isn’t it?! 

today’s recipe was given to me by my friend sze. we were talking about food one day (i tend to talk about food a lot) and he mentioned how one of his favorite comfort food dishes was spam fried rice. i immediately asked him for the recipe because i had never had spam before so i figured this was a perfect way to try it. i know spam can get a bad rep but i figured, if it was good enough for sze, then it would be good enough for me… and let me tell you, it was delicious!

here it is, sze’s spam fried rice recipe!!

INGREDIENTS:
1 tbs sesame oil
1 lg white onion
1 med. can of spam  
1 pkg frozen peas and carrots
4 cups of cooked white or brown rice
2 eggs
2 tbs soy sauce
1 1/2 tbs szechuan sauce 
1/4 cup golden raisins
3 green onions 

INSTRUCTIONS:
start by chopping up the onion.  

here is a trick to help you not cry when cutting onions, if you place the onion in the fridge for a few hours before cutting you will not cry. i don’t know why that happens, but i am very glad i always put my onions in the fridge. 

ohh spam…  

take the spam meat out of the can and slice it lengthwise twice. you want to have spam sticks. 

cut the spam sticks into small bite size squares.

let’s start cooking, sauté the onions in half of the sesame oil. 

make a well with the onions.

and add the spam along with the remaining sesame oil. 

cook the spam and onions until the onions have wilted and the spam is seared on most sides. 

once the spam is seared add the frozen peas and carrots. you can add bean sprouts if you have them as well. 

mix the vegetables well with the spam and onions and cook for a few more minutes. 

while they cook whisk the eggs.

and mix together the szechuan and soy sauces. 

add the rice to the vegetables and spam. 

mix in the rice with the vegetables and spam. drizzle half of the szechuan/soy sauce mixture to it.

make a well in the center and add the eggs. 

fold the eggs into the rice and add the remaining sauce. 

mix everything well to make sure the rice, vegetable and spam are evenly distributed. add the green onions and raisins. 

mix them in and cook for a few minutes to warm them up. 

and that’s it. so easy to to make, perfect for a weeknight dinner when you just want to cook something quick and be done with it. serve the fried rice with some fresh green onions and enjoy. 

thinking back i think would sauté the spam in the oil first before adding the onions. i liked the crunchy spam parts the best. 

i really liked how easy this was to make. this is a great pantry meal which can be adapted depending on what you have at hand. 

i hope to have made sze proud with my rendition of his spam fried rice.  i really enjoyed cooking and eating it. a perfect dish to try spam for the first time.
