secret recipe club: baked eggs with thyme!!

today i am taking a break from the holiday recipes to bring you another installment of the secret recipe club.

do you remember my past secret recipe club assignment? it was so much fun!

this time i was assigned to the blog: a couple in the kitchen. choosing a recipe was a bit difficult because they have so many fantastic recipes on their blog. in the end i chose these baked eggs with thyme. i made them on sunday morning for a nice, quiet breakfast with the irishman.  

they turned out great and will become a staple in my breakfast recipe repertoire. and now, finally i want to share with you the recipe, here it is: baked eggs with thyme!!

INGREDIENTS:
4 large eggs
4 tablespoons half and half
1 tablespoon unsalted butter
1 tablespoon chopped fresh thyme
2 tablespoons shredded parmesan cheese
salt and pepper to taste 

INSTRUCTIONS:
turn the oven onto the broil.  crack two eggs into each bowl.  

split the half and half onto two oven safe bowls and add 1/2tbs of butter onto each bowl. 

bake them in the oven for 2-3 minutes until it starts bubbling. 

quickly pour the eggs onto the oven safe dishes making sure not to break the yolks. add the parmesan, salt, pepper and thyme. 

bake the eggs for another 5 minutes until the egg whites set. 

serve the eggs on the bowls or carefully slide them onto a plate. 

these were really delicious. the thyme was a nice touch. 

they were so easy to make, perfect for an easy sunday morning meal.
