
hello! how are you doing with the holiday food recovery? good? ok! today’s recipe is perfect for a lazy or busy day in which you don’t feel like cooking too much. you only need 5 ingredients and can even omit one so really, only 4. my friend april gave me this recipe. april is a fantastic cook, but also a very busy girl, going to work and a fancy school - so she knows a thing or two about quick delicious meals. she was kind enough to give me this recipe, so the least i could do is post it here :)
and now, the yummy recipe for april’s egg fried rice!
INGREDIENTS:
2 cups of cooked white rice
sesame oil
3 eggs
soy sauce
bean sprouts*
*optional
INSTRUCTIONS:
beat eggs with a fork until they are mostly uniform.
heat up about a tablespoon of vegetable oil on a skillet

once hot, pour in the eggs

scramble the eggs on medium heat, until they are fluffy and the egg whites are well cooked

transfer the eggs to a cutting board and give them a rough chop

heat up a some sesame oil in a pot. about 2-3 tbs.

fry the rice in the hot oil making sure to coat thoroughly

add soy sauce. use lightly if you are using regular soy sauce to avoid having salty rice.
fry the rice for 5 minutes on medium heat to warm throughout and make a well in the middle.

if you are using bean sprouts add them in the middle of the well and mix well with a bit more soy sauce (2 tbs should be fine)

once the bean sprouts are mixed in, add the egg with one more tablespoon of soy sauce.

mix everything well and serve.

serve warm and enjoy!
