broiled tilapia with a ginger, coconut and curry sauce

in this household, tilapia is the fish of choice.  it is the IM’s fault, i have eaten more tilapia since i met him than my whole life before that… and i grew up in a caribbean island hahaha! it seems that lately when i cook fish, it is more often than not, tilapia. and i am ok with that, it is definitely a yummy fish. so, when i had craving for coconut i knew that the perfect pairing for it would be some tilapia. of course, if you do not like tilapia you can subsitute it for your favorite fish. the best option would be something not too fishy.

you’ll see that this requires a lot of spices. do not fear the spices. they end up blending together gorgeously and the result is this fantastic light show of flavors in your mouth!

here it is, broiled tilapia with a ginger, coconut and curry sauce!

INGREDIENTS:
2 tilapia filets
2 teaspoons of fresh ginger
2 garlic cloves
1 teaspoon of curry powder
1 cup of chopped peppers
1/2 medium white onion
1 tablespoon of brown sugar
1 teaspoon of sesame oil
1 can of coconut milk
2 tablespoons of soy sauce 
2 limes 
salt & pepper 

INSTRUCTIONS:
season the fish fillets with the juice of one lime, a sprinkle each of salt and pepper… so about 1/2 tsp of salt and 1/2 tsp of pepper.  set them aside to marinate. 

while the fish is marinating, chop up the onion and pepper; mince the garlic and ginger.

heat up the sesame oil and cook the ginger and garlic until they start to brown.  try not to let them burn too much, you only need to cook them for 1-2 minutes.

once the ginger and garlic brown up add the peppers and onions.  cook for another minute. 

add the curry and cook for another minute.

next step is to add the soy sauce and brown sugar.  mix well and cook for another minute.

finally, add the coconut milk.  make sure to mix things well.  simmer over medium heat but do not let it boil.  cook it for about 6 minutes…

which is coincidentally the same amount of time it takes for the fish to cook.  

spray cooking oil on a dark baking sheet.  place the fillets and put them under the broiler…

for 6-8 minutes or until the fish flakes easily.

at this point, the sauce should be ready and the smell making your mouth water. yup.

hopefully you have some couscous or rice handy to serve the fish with. i had couscous. 

pour the sauce over the fish and sprinkle some of the lime juice over it.

the sauce has so many layers of delicate flavors.  at first i was afraid the flavors would overpower each other, but thankfully i was wrong.  the flavors complement each other beautifully and it makes for a quick and delicious dinner.  this is definitely one of those dishes to cook when you need to impress someone.  they will think you slaved away cooking all day to make this great sauce and in reality it only takes about 20 minutes total.  

also, if you have leftover sauce (like i did) just put it in an airtight container and throw it in the freezer. i froze the leftover sauce and used it about two weeks later and it was still awesome.
