caramelized yams

caramelized yams are not just for the holidays, they are wonderful all year round. they are quick, no fuss side dish.  here they are: caramelized yams!

INGREDIENTS:
2 cups of white sugar
1tbsp cinnamon
1tbsp nutmeg
1tsp vanilla extract
1/4tsp salt
1 stick of butter
6 yams

INSTRUCTIONS:
wash, peel and cut the yams into cubes.

melt the whole stick of butter in a skillet and add the yams. turn them so they are coated with butter.

in a bowl, mix together the sugar, nutmeg, salt and cinnamon.

sprinkle the sugar mixture over the yams and mix them so they are all coated with sugar.

cover them and cook on medium-low heat for 20 minutes. keep turning them periodically so they are coated throughout.

they will be ready to eat once the yams are tender and a fork goes in and out easily. mix in the vanilla extract right before serving and enjoy!
