monday night i came home tired and hungry. i stopped by the supermarket and saw this mediterranean seasoning which immediately inspired me to make: chicken pita pockets and sauteed cauliflower
this is the seasoning i used:

mccormick, nothing too expensive.
so onto the
INGREDIENTS
1 packet of chicken cutlets
mccormick mediterranean seasoning
2 limes
hummus (any kind of hummus works. i have the 40 spices one, i like that it is a bit hot.)
i head of lettuce
pita bread
2 garlic cloves
cauliflower
butter
sofrito seasoning

PREPARATION
chop the garlic cloves as finely as you can.
season the chicken with the mediterranean seasoning, the garlic and the lime juice. let it stand to marinate.

relax a bit while you wait for it to marinate. have a glass of wine or some tea. after about 10-15 minutes get back to the kitchen.
clean up your cauliflower and cut up the fleurettes. melt some butter on a skillet. once the butter is melted and warm put in about 2 spoofuls of sofrito* and the cauliflower. lower heat and cover.

ok, so the way i did these was by using the boy’s george foreman grill but you dont have to. you can use a skillet and just make sure they cook throughout.
place the chicken on the grill. keep an eye on them so they do not burn.

once cooked it is time to assemble. heat up the pitas in the oven or grill and cut in half to make the pockets.
spread hummus onto one side of the inside and place the lettuce on the other side. put the chicken in between. at this point the cauliflower should be done so put it in your plate with your pita pockets and enjoy!

*sofrito is a seasoning used as base for many dishes in the dominican republic. actually, most dishes have sofrito or sazon as we normally call it. my granma makes my sofrito in traditional dominican style with peppers, onions, vinegar, lime, garlic, cilantro, oregano, parsley, celery and lots of love.
