pork and pineapple skewers!

according to the weather reports, we are now in springtime. i have to be honest and confess i do not really believe that since it has been so rainy and cold in new york in the past few days.  to cure me from these april shower blues i decided to make some really colorful and caribbean dinner.  and that is how i came up with these pork and pineapple skewers.  growing up, my dad would have bbq’s where all his friends would come and we would entertain them.  dad, of course was in charge of the grill.  one of his specialties are skewers, and he always made a point to add some type of fruit to them.  and that was my inspiration for this recipe. 

here it is: pork and pineapple skewers!

INGREDIENTS:
2 cups of fresh pineapple chunks
3 garlic cloves
1 tbs of grated ginger
2 tbs of chopped green onions
1 tbs of olive oil
1 lime
1 teaspoon pepper
1/2 large green onion
1/2 large red onion
1 1/2 tbs of honey
1 tbs of soy sauce
1 lb of pork loin

INSTRUCTIONS:
start my grating the ginger and chopping up the onion and garlic.

cut the pork into squares and place it in a ziploc bag.  add the ginger, onions and garlic.

add the honey, ground pepper, soy sauce and lime juice.

mix that well and set to rest in the fridge for at least 1 1/2 hours.  i left it for about 6.  the longer it marinates, the better.

when you are ready to start cooking, chop up the peppers and pineapple.


(i’d frozen some green peppers which is why they look frosted)

take the pork out of the bag and place it in a bowl for easier assembly.

set up your assembly line: port, plates, skewers, peppers, pineapples.

assemble the skewers.  i like to put the pineapple between two pieces of pork so both pieces get some pineapple flavor in them.

assemble until you run out of ingredients.

i don’t have a grill. i have a broiler, so i decided to broil them instead.  necessity is the mother of invention…

turn the skewers a few time so they cook evenly.  they will be ready once the pork is no longer pink inside. 

serve with brown rice and sprinkle some fresh green onions on top.

the charred/caramelized parts were my favorite.

since i used wooden skewers, they caught slightly on fire in the broiler which made me a little nervous.  i think i will invest in metal skewers.
