
for this dish i had to call my mom to make sure i had the recipe right. it is one of my favorite dishes and always enjoyed it when mami made it. my try wasn’t as good as hers but it still was delicious!
INGREDIENTS:
beef streak
1 red onion
4 cups of rice
1 can of sweet corn
sofrito/sazon
1/2 green pepper
1/4 red pepper
2 chicken bouillon cubes (optional)
vegetable oil
white or apple vinegar
sugar
1 garlic clove
goya seasoning
oregano
1 can of tomato paste

INSTRUCTIONS:
clean and season the beef with some sofrito/sazon and goya seasoning powder. let stand aside.
put some water on a kettle/pot to boil. chop up 1/4 of the onion, 1 garlic clove and the peppers.

heat up 2 tablespoons of vegetable oil on a pot. stir in onion, peppers and garlic. sprinkle 1/2 teaspoon of oregano, mix in the chicken bouillon. cook for a bit and stir in the corn (with its liquid), the rice and half the can of tomato paste. stir everything once and the cover with boiling water. cook uncovered on medium heat. cover it once all the water evaporates and cook on low heat until rice is tender.
now onto the meat.
heat up a tablespoon of oil on a skillet and cook the meat.

while the meat cooks cut up half of the red onion. once the beef is cooked move to a plate and drain the skillet. cook the onions in the skillet used for the beef. add about 1/3 cup of vinegar and 2 spoonfuls of sugar.
cook them a bit and then add the liquid from the meat to the onions and the beef on top. cover and cook on low heat for about 10 minutes.
serve with the rice and enjoy!
