chicken with tomatoes, thyme and garlic and arugula and mushroom salad

ok, i tried posting this before but the computer decided to shut itself down.  so let’s try this again, shall we?

today’s dish is chicken with tomato, garlic and thyme with an arugula and warm mushrooms salad. the chicken was inspired by a recipe posted on the pioneer woman.

INGREDIENTS

for the chicken:

chicken

canned tomatoes

thyme

5-7 whole garlic cloves

salt and pepper

olive oil

butter

oregano

basil

linguine or any type of pasta cooked al dente

seasoning salt/powdered seasoning

white wine… i used white cooking wine

for the salad and vinaigrette:

arugula

clean and sliced mushrooms

granulated sugar

dried thyme

salt and pepper

olive oil

balsamic vinegar

dijon mustard

parmesan cheese

PREPARATION:

in a deep pot heat 2 tablespoons each of olive oil and butter. meanwhile clean and season the chicken with pepper and seasoning salt.  cook the chicken on the oil and butter mixture until slightly brown.

once the chicken is brown place aside. 

now, there will be this brown liquid at the bottom of the pot.  do not throw that out.  i repeat, do. not. discard.

pour 1/2 cup of white wine on the pot to clean up the pan.  add the tomatoes and seasonings.  

mix in the seasonings and add the chicken

 

add the garlic… i added 5 cloves.  submerge the chicken and cover the pot and cook on medium heat.

cook the chicken until its cooked thru.  i wasn’t too hungry so i cooked the chicken for like an hour.

now onto the salad.

first things first, lets make the mushrooms.

in a skillet heat up about a tablespoon of olive oil and cook the mushrooms with thyme, salt and pepper.  cook the mushrooms until they are brown.

in a bowl combine olive oil, balsamic vinegar, sugar, dijon mustard, thyme, parmesan cheese, salt and pepper.  mix well.

mix the arugula and mushrooms with the dressing and serve.

pour the chicken and tomatoes over cooked pasta, the sauce will be light, don’t worry about it.  that is the way it is supposed to be. pair with the salad and enjoy!
