pantry dish #2: dinner or breakfast potatoes

originally this dish was going to be a potato and mushroom hash… well that didn’t quite work out. once i took everything out of the fridge i smelled the mushrooms and YUCK! that was a mistake! so here we go… a potato hash which can be used as a side for any meal, even breakfast… yay!

INGREDIENTS:

6-8 potatoes

1/2 onion

1 cup clean sliced mushrooms*

1/2 green pepper

1/2 red pepper

3 garlic cloves

tomatoes*

eggs*

paprika

chili powder

salt and pepper

arugula

balsamic vinaigrette

olive oil

ok on to making this thing!

PREPARATION:

first, chop off the potatoes into cubes.

see the ones in this picture above?… yeah those are too big.  chop them smaller.. doooo it!

thinly slice the onion.  since it is half an onion lay it flat on the cutting board.  chop off one end slice it so you have half moon shape. like this:

peel and mince the garlic. 

in a skillet heat up 2 tablespoons of olive oil.  cook the onions and garlic.

it is going to smell soooo goooood!!!

when the onions start wilting a bit mix in the potatoes.

mix them in and cover.  you can add more olive oil if you think they need it.

start chopping off the peppers. i don’t have a picture of them (i guess i was hungry) but just chop them as small as you wish.  cook them thru then add a sprinkle of paprika and chili powder.  mix that well.

now take the peppers, add them to the potatoes with two tablespoons of water.  cover them again, have to make sure the potatoes cook well. no raw potatoes for us. if you had mushrooms and tomatoes this is when you would add them in.

let them cook nicely.  go to the living room and watch tv or something while they cook.

once they are cooked serve with eggs cooked your favorite way.  i was tired and ended up not making any eggs, sorry!

mix some arugula with olive oil and balsamic vinegar and serve with the potatoes.
