tonight’s recipe is YUMMILICIOUS! (yes, i know that’s not a word, but after you try these you’ll understand!). it is another easy and quick recipe. of course it wasn’t without its hiccups. as we are seeing here, every time i try making something something happens… onions go bad, pizza crust goes bad, mushrooms go bad but we know there is always a way to salvage things hahahaha!! anyway, here it is, my recipe for shrimp tacos!

WHAT YOU’LL NEED
1lb of raw, clean shrimp
1 pack of tortillas
1 tomato
2 tomatillos (optional)
1 small onion
1/2 red pepper
1/2 green pepper
5-7 limes
3 garlic cloves
1 can of sweet corn
1 tablespoon of olive oil
salt & pepper
lettuce
sour cream
1 bunch of cilantro

PREPARATION
first, clean and wash the shrimp. mince the garlic as finely as you can.

i used the equivalent of 3 large cloves but you can use more or less depending on how much you like garlic.

mix the shrimp with the olive oil, garlic and the juice of two limes. make sure all the shrimp is coated.

mix well cover and set aside
it is time to start chopping for your pico de gallo!! pico de gallo is really really good and homemade pico de gallo is even better. (yes, i like writing pico de gallo)
grab the peppers, onion, tomato, tomatillos, cilantro… so everything but the shrimp! start chopping all of them and mix them in a bowl.




mix in the juice of the remaining limes and mix well. then refrigerate.

at this point you should add the corn. i bought the wrong corn, i bought creamed corn instead. never a dull moment! on an related note, does anyone have any good recipes involving creamed corn?

ok, now we are ready to cook the shrimp. i used a george foreman grill. who said city folks don’t grill ;). (i kid) if you don’t have a grill just use a skillet. just do not use any oil on it. load up the grill/skillet.

make sure to remove the shrimp when its all cooked

(sorry about the blurry photo, i was getting really hungry)
heat up some tortillas and begin to assemble!

(ok, so the mozzarella cheese is there because i figured “we should have some cheese!” we didn’t have nacho/jack cheese so i took out the mozzarella, well, ended up not even using it)
so get ready to assemble. first the shrimp

then the lettuce (which should have been shredded but i was tired and had a hungry man just staring at the plates waiting for them to be ready)

then the sour cream and homemade pico de gallo

fold over and make another one. give them to the first hungry person you see, which in my case was the irishman

he was very happy!
so there you go, my recipe for shrimp tacos. oh, by the way… i don’t eat avocado which is why i didn’t make guacamole.
