
i made this recipe last sunday. let me tell you one thing, last sunday was a humid and hot day. so i decided that the best thing to do was to bake something. hahahaha! hey, i never said i was smart, just that i love food. so here it is, my recipe for easy and delicious baked chicken breast with mashed potatoes. i am VERY excited about this recipe. it was soooo easy to make and just delicious, i mean… best chicken i’ve had in a looooong time delicious!!
INGREDIENTS:
- 6 chicken breasts
- seasoning powder - i chose goya and mccormick’s grill mate herb and garlic seasonings
- oregano
- paprika
- butter
- garlic cloves
- 2 limes
- 1 cup of white cooking wine - or regular wine too

(yup, blurry lens again, i really need to not touch it!
PREPARATION:
clean the chicken. place the chicken in an ungreased baking dish. season with the seasoning powders. the darker one is the mccormick seasoning.

at this point i thought… hmmm, i should put some garlic in here. so i took 3 garlic cloves and stuck them underneath the chicken. i am very happy i did that. very happy.
now, add the paprika and lime juice.

rub some butter on each breast. this will add taste and will help the chicken brown. it is like bronzer but for the chicken. and us ladies know, bronzer makes us look good!!
ok ok enough bronzer talk. once you rub the butter on the chicken add about a cup of wine to the pan. pour in the wine on the side of the pan so the seasoning won’t come off.

now, admire the chicken before sticking it in the oven…
bake the chicken for an hour or until fully cooked at 350 degrees. i cooked it for longer because we weren’t ready to eat yet.
once i took out the chicken it looked something like THIS!!!

oooohhhhh….. my mouth is watering as i post these pictures!
while the chicken was baking i made some mashed potatoes. i added milk, butter and parmesan cheese when i mashed them.
serve the chicken over the mashed potatoes with plenty of the wine/chicken juice liquid.
