moro rice and beans to make my mom proud

i need to confess something.  for the longest time i didn’t know how to cook rice.  this was cause for a great deal of embarrassment since all good dominican girls know how to make rice. 
here is the thing, dominicans eat rice almost every day… white rice, rice and beans, rice and chicken, beef, corn, veggies, shrimp, rice pudding… you name it, we eat it.  so, the fact i didn’t quite know how to cook rice was a sore subject. 
but now, i am so proud.  finally, i have seen the light! i learned to cook rice! i am making my mom proud!
so here it is, my recipe for moro rice and beans!

INGREDIENTS:

  • 3 cups of white rice
  • 1 can of red kidney beans
  • vegetable or canola oil
  • 1/2 red pepper
  • 1/2 green pepper
  • 1/2 onion
  • cilantro
  • 2 cubes of chicken bouillon*
  • 1 can of tomato paste
  • 1 tablespoon of sofrito
  • dried oregano
  • 1 large garlic clove

PREPARATION:
first start boiling some water.
while the water boils, chop up the onion, peppers, garlic and cilantro.

 

in a deep pot heat up 2 tablespoons of vegetable or canola oil.  cook the onion and garlic; make sure they do not burn.

add the cilantro and the peppers

 

add the sofrito, a sprinkle of dry oregano and chicken bouillon if you are using it.  make sure to crumble the chicken bouillon.  mix everything well.

now add the beans

 

at this point, add the rice.  by the way, the water should be boiling by now so get ready to for it.

do not mix the rice yet.  add the tomato sauce.

then add the boiling water and mix in.  do not mix the rice too much that way you do not activate the starch.

cover the rice with the boiling water and cook on medium heat until the water evaporates.

 

once the water evaporates lower the heat and cook covered

cook until completely dry.  the rice should not be sticky.  i boiled some corn and made a salad to go with it.

this was very easy and delicious.  i hope you try making it
