
this is another dish my mom used to make for us. i made it on sunday night to celebrate the series finale of LOST. at the end of the night i was happy with both dinner and the show. so here it is for you, my version of my mom’s recipe for pork chops in beer sauce.
INGREDIENTS:
1 celery stalk
1/2 red pepper
ground pepper
tomato paste
dried oregano
sofrito
2 garlic cloves
1/2 sweet onion
1 12oz bottle of beer (light/wheat works better than stout. i used heineken ‘cause that’s what we had in the house)
(notice the lack of ingredients in the picture - that was a tough week)
PREPARATION:
season and marinate the chops at least an hour before cooking. i used sofrito and pepper to marinate. the meat marinated for about 2 hours.

2hrs later….
now that we are ready to cook heat up a skillet or a large saucepan depending on how many chops you have. i ended up switching from the skillet to the pot halfway through. once it is hot enough start cooking the chops. make sure they don’t burn.
while they start cooking chop up the celery, onion, garlic and pepper.

once the chops are brown add the onions and garlic

and the celery and pepper

and some ground pepper

cover and cook on medium heat. i took this time to peel some potatoes and start boiling them.
add the tomato paste and the beer

cover and cook simmered for about 20 minutes to get the meat nice and tender.
serve over mashed potatoes or rice. and enjoy!
