
my brother came to visit me on saturday to catch up… and also so i could feed him. he is 5 years younger than i and we get along really well. i always joke around that the reason for that is that i moved from to new york at 15, so by the time he went through his teens we only saw each other on few occasions which meant we never got into teenager arguments. well, we do still argue about who is the favorite (it is me!).
last time we were in ireland, the irishman found a recipe for chicken curry that his sister wrote for him.

so i figured, since i was cooking for my sibling i should use the recipe the irishman got from his sibling. here it is, the recipe for irish chicken curry!
INGREDIENTS:
1lb. cubed boneless chicken
1 onion
6-8 mushrooms
1 red pepper
1 chicken stock cube
2 tsp. medium-mild curry powder
2 tsp. all-purpose flour
1 1/2 cups of boiling water
1 apple
1/4 cup tomato sauce
1 tbsp. butter
salt & pepper

INSTRUCTIONS:
chop up the mushrooms, red pepper and onion.

chop them up about the same size so they cook at the same rate.

dissolve the chicken stock cube into the boiling water.

melt the butter in your heaviest skillet.

start cooking the chicken on medium-high heat.

while the chicken is cooking, mix together the curry and flour.

once the chicken is browned on most sides remove from the skillet and set aside.

using the same pan, start cooking the vegetables. if your pan seems dry, add 1/2 tbsp of butter. mine did not need any:

cook the onions and red peppers.

mix them and cook until the onions start wilting.

add the mushrooms.

cook the mushrooms for about 3 minutes. they will shrink and release some liquid.

after about 3 minutes, add the chicken.

sprinkle the flour and curry mixture.

pour in the chicken stock.

mix well and let it summer.

meanwhile, chop up the apple.

add the apple, tomato sauce, salt and pepper to taste.

mix everything well. cook covered for another 10 minutes.

serve it over white rice!

my brother really liked this meal. the irishman said it tasted very traditional. so i declare this recipe a success!
