mexican street corn

ok, let’s do this again.  i just posted this recipe but for some reason all the words disappeared. it was a really good post too, i am re-typing it now before i forget. 

i bring you today the recipe for mexican street corn.  i had this for the first time a few weeks ago at dos caminos while we were celebrating our friend’s birthday. honestly, i don’t remember what i had a main but i definitely remember the side dish: mexican street corn.  after some trials i am very happy with the result.  here is the recipe for: mexican street corn!

INGREDIENTS:
2 ears of corn
canola or vegetable oil
4 tbs of mexican crema
1/4 tsp chili powder
1/4 tsp garlic powder
black pepper
1/2 cup cotija cheese
1 lime 

INSTRUCTIONS:
start by removing the corn husks and cutting the corn in half.  rub the corn with oil and place in a hot grill pan or heavy skillet.  

while the corn cooks; mix together the crema, chili pepper, garlic powder and pepper. 

 

turn the corn to make sure it gets charred on all sides. the corn should take about 10 minutes to be cooked. 

crumble the cotija cheese in a plate. use feta cheese if you can not find cotija. 

i like sticking skewers onto the corn to make corn lollipops. they are more fun to eat this way!

next, coat the corn with the crema mixture.  if you cannot find crema, use mayonnaise.  

roll the crema coated corn on the cotija cheese and sprinkle with chili powder. 

squeeze lime juice onto the corn right before biting in. 

the sweetness of the corn goes really well with the savoury crema and cotija cheese; the chili powder and lime juice add a bit of heat and zest to round up the flavors.
