
huevos rancheros translate into rancher eggs. they are a mexican dish popular mid-morning fare in poor farms. once they came to the states, we added sour cream, cheese and many other toppings. they have become very popular for breakfast and brunch. there are many styles of huevos rancheros. today i bring you the way make them, an easy and filling dish.
here is my recipe for huevos rancheros!!
INGREDIENTS:
1 1/2 cup of vegetable or canola oil
2 flour tortillas
2 large eggs
1/2 cup of baked or re-fried beans
2 tbs salsa
2 tsp of sour cream or mexican crema
crumbled cotija cheese

INGREDIENTS:
lightly fry the tortillas on hot oil.

they will puff up a bit. fry them until they are lightly brown.

set the tortillas on paper towels to soak up any extra oil and fry the eggs in the same pan.

to assemble the huevos rancheros:
spread the hot beans over the tortillas

add the salsa and the sour cream

finally, place the eggs on top and crumble cotija cheese over them. add some cilantro or parsley for color.

huevos rancheros are so filling, no wonder they are a popular farm fare!

and since nowadays you can buy canned baked and re-fried beans this is a low effort dish. i like the different textures in each bit, there is the crispy tortillas, the soft eggs and the beans. you can adjust the spicy element by choosing your favorite salsa.
