
i bought chorizo for the first time the other day. i think at first i was planning on incorporating it to the spanish potato omelet and calling it a day… but i was feeling adventurous and didn’t feel like having potatoes that night. so i decided to experiment and use some rice. my grandma gave me a 5lb bag of rice (yes, she is fantastic!) which i really needed to start using it. and so, this is how i ended up with this…. arroz con chorizo!
INGREDIENTS:
1 lb of chorizo or a 5 link package
olive oil
2 cups of rice
1 can of chicken broth
1 box of frozen peas
1 can of diced tomatoes
1 large spanish onion
1 red pepper
2 tbs of saffron
2 cloves of garlic

INSTRUCTIONS:
i started by chopping up the garlic

and the onion

and slice the pepper

cut up the chorizo into slices of about an inch

lets get ready to cook. open up cans and the peas, drain the tomatoes.

in a large pot heat up a teaspoon of olive oil and cook the chorizo

once the chorizo has browned remove from the pot but do not throw out the oil. instead, cook the onion and garlic in it. do it! pretty please…

add the peppers…

and the peas

to that, add the chorizo

then add the rice and saffron

mix things well and cover with the chicken broth and water

and another picture because it is so colorful and pretty

cook uncovered on high heat until it dries then cover and lower the heat, cook for about 10 minutes longer

serve with a nice salad and a glass of red wine
