weeknight dinner medley

i guess this is sort of a pantry dinner. it was time to go to the supermarket and we only had a little bit of random foods in the house. i used everything i had on the fridge and thankfully, it made for dinner.  i made some beef, a salad with homemade dressing (recipe below) and some baked corn.  the main recipe i am writing up is the bbq beef! INGREDIENTS:
1 lb of beef
2 tbs of soy sauce
salt and
pepper
stir fry sauce (optional)
4 tbs of honey
bbq sauce
2 tbs of sesame oil
cayenne
pepper (optional)
1/2 red onion

 INSTRUCTIONS:
first using a mallet hammer down the meat.  take out any frustrations on that meat, tough day at work? go to the beef! someone s
pilled coffee on you on the train? take it out on the beef! you fell in front of someone you like? take it out on the beef! it is not that i’m violent, i just want you to really tenderize that beef!  :)

so after you’ve hammered it out cut the beef in strips.  season with salt and pepper, cayenne pepper, honey and all the sauces.

 

cover and set aside for at least 20 minutes.

once i was ready to cook the first thing i did was wrap some corn in foil paper and throw them in the oven.

 

heat up the sesame oil… 


add the meat…

cover and lower the heat. once the meat is all brown, add the chopped onion

add about a tbs each of the sauces, cover again and let it cook for another 30 minutes.

check on the corn to make sure it doesn’t burn!

keep checking on the beef.  if it dries out just add some more sauce and honey.  serve once it is ready

i served it with the corn, a nice salad and some soda bread

for the salad dressing i mixed together

  • balsamic vinegar
  • honey
  • salt and pepper
  • olive oil (1/2 amount as the vinegar)

so yummy!
