
is it hot where you are? because it is blazing in new york! it has been so hot here lately. and although i love cooking; cooking in hot weather is not my thing. but i have to eat so cook i must!
it is so hot that i went to the supermarket yesterday with the pretense of buying food, but in reality it was to take advantage of their air conditioner. i walked up and down the aisles for almost an hour hahahaha! once i got home, all that walking made me really hungry and made these sandwiches to avoid using the stove. lucky for him, the irishman came home early and we ate our sandwiches together, in front of the fan. the sandwiches were filling, but not too heavy and the fresh lemon gave them a nice freshness which was very much welcomed on a hot day. here is the recipe for steak sandwiches with lemon mayo!!
INGREDIENTS:
2 tbs of olive oil
1 tbs soy sauce
1 tbs & 1 tsp of freshly grated lemon peel (about 1 lemon)
1 teaspoon of lemon-pepper seasoning
1 1/2 lbs of london broil steak (about 1in thick)
1/4 cup mayonnaise
1 cup of shredded romaine lettuce
1 baguette

INSTRUCTIONS:
mix together 1 tablespoon of olive oil, soy sauce, 1 tablespoon of grated lemon peel and 1/2 teaspoon of lemon pepper seasoning salt.

rub the steak with the olive oil mixture and let it marinate for 10 minutes at room temperature.

this dish is intended to be made on the grill or a grill pan. i used our electric george foreman grill to cook the steak.
cook the steak 8-10 minutes for a medium steak. turn once or twice if you are using a conventional grill. cook for longer if you would like your steak to be well done - about 5 more minutes.

while the steak cooks, mix together the mayonnaise, 1 teaspoon of grated lemon peel and 1/2 teaspoon of lemon salt.

slice the bread and then cut in half to stuff it. drizzle 1-2 tablespoons of olive oil over the open bread pieces.

clean and shred the romaine hearts and set aside until ready to use.

once the steak is cooked to your desired temperature (i cooked it to medium) let it rest for two minutes. while the steak rests, grill the bread until crispy… coincidentally, about 2 minutes. there is a method to the madness.

spread the lemon mayo on both sides of the bread.

slice the meat diagonally.

start assembling the sandwiches. lettuce:

and then arrange the beef over the lettuce. i made some quick sweet potato fries to go with this sandwich.

this was a perfect meal for a summer day. it was quick to make (about 30 minutes) and did not require that much effort.

the irishman said the lemon mayo reminded him of ceasar dressing and i have to say, i agree with him. the fresh lemon peel adds a nice freshness to both the steak and the mayo.
