
the irishman has an esquire subscription, which i somehow always end up reading it before him. i don’t know, but i just find it so interesting. once in a while they publish recipes on their ‘eat like a man’ section, a lot of times these are stews, bbq and typical man food and sometimes they are simply restaurant recommendations but this month’s issue was different. this month’s ‘eat like a man’ article was titled ‘the way to cook fish’. my mouth watered when i read it so of course i tried it as soon as i had a chance. and to pair the fish i roasted some vegetables. so here it is, esquire’s broiled fish and my roasted pumpkin!
INGREDIENTS:
for the fish:
4 pieces of tilapia*
butter
tandoori powder (i only had regular curry so that’s what i used)
salt & pepper
olive oil
1/4 cup of lemon juice
for the pumpkin:
1 1/2lbs of pumpkin**
1/2 large red onion
1 red pepper
salt and pepper
olive oil
*or any white solid fish such as red snapper, halibut or stripped bass
**i found some dominican pumpkin at the supermarket, but any kind works

PREPARATION:
start with the veggies since they will take the longest. clean but don’t peel the pumpkin. preheat the oven to 400 degrees.

chop the pumpkin into squares

then cut the onion and red pepper

on a baking sheet lay two pieces of foil paper crossing each other. spread the pumpkin in the center. and season with salt and pepper.

add the peppers and onion, season with more pepper. drizzle with olive oil.

fold over the foil and create a package

stick the pumpkin pack in the oven for 20 minutes, or until the pumpkin is tender. now start with the fish. clean the fish and season with salt and pepper.

cover a baking sheet with foil and butter the foil. place the fish on the buttered foil. rub some butter on the fish.

sprinkle curry on top of the fish

place the fish in the broiler for 5 minutes. meanwhile, in a bowl mix together about a tablespoon of curry, 2 tablespoons of olive oil and 1/4 cup of lemon juice. this will be drizzled on the fish once it is ready.

take the fish out of the broiler

and the pumpkin out of the oven

serve and drizzle the fish with the curry sauce

the irishman ate it so fast! and we have determined that this will be the next dish served on our next dinner party (yes friends, let me know who wants to come to dinner next)

this was super easy to make! and so flavorful. i am going to comb thru any old esquires here to find more recipes. this is a very good indication of the quality of the recipes they choose to publish.
