
how was your weekend? mine was good. i have been really busy with work lately and had not have chance to cook; thankfully that changed on saturday. the irishman came home from work early to hang out with me because he missed me (shh.. don’t tell him i said that); since our work schedules are opposite we had not really seen each other in 3 or 4 days. he suggested we ordered chinese food for lunch. but since i still had a few hours before i had to go to work i decided to make our own lunch instead. so he sat in the kitchen telling me about his day as i made one of our favorites: kung-pao chicken.
here is the recipe for: kung-pao chicken!!
INGREDIENTS:
2 tbs of sesame oil
1 bag (lb) of broccoli slaw mix
1 lb of boneless skinless chicken breast
1 medium red pepper
1/2 cup of water
2 heaping tbs of szechuan sauce
1 tbs of honey
1 package of chinese noodles
a handful of salted peanuts

INSTRUCTIONS:
start by cooking the whole bag of broccoli slaw in 1 tablespoon of the sesame oil. isn’t broccoli slaw rad? so nicely and evenly chopped.

cook the slaw for about 4 minutes, until it is crispy. place the slaw in a plate and add the chicken to the hot skillet.

cook the chicken for about 8 minutes and add the honey, szechuan sauce and water. mix well to dissolve the sauce and cook for another 5 minutes.

chop and add the red pepper to the chicken. lower the heat and cook covered.

while the chicken is cooking, prepare the noodles as per the package’s instructions.

while the noodles boil, add the cooked slaw to the chicken and peppers. turn a few times to coat the slaw with the sauce and incorporate it in the chicken.

by now the noodles should be done. they only take a few minutes.

drain the noodles and run cold water though them.

transfer the noodles to a bowl and toss them in the remaining sesame oil.

by now the chicken should be cooked through. turn the stove off and mix in the peanuts.

top the noodles with the chicken and slaw.

i really liked the peanuts, they were a nice crunchy surprise! the sauce was spicy but not over powering. i really liked how easy it was to make this (and so quick!). i may never order kung-pao chicken from the corner chinese place any time soon!
