turkey milanese with tomato, mozzarella and basil salad

i am not a turkey person.  other than thanksgiving, turkey is not really my first choice.  but the other day i saw some turkey last time i was at the supermarket and had an urge to cook it.  don’t know why or how, but i just really wanted to make some turkey.  looking through the kitchen i found some panko and voila! an idea was born. hahaha! anyway, since it is summer in ny and the tomatoes are gorgeous i also made this salad which is so easy and delicious. i could eat buckets of it, thankfully i don’t. so, here it is, recipe for turkey milanese and tomato, mozzarella and basil salad!

INGREDIENTS:
for the salad:

olive oil
fresh basil
balsamic vinegar
salt and pepper
tomato
mozzarella cheese

for the turkey:
1lb of turkey breast
all purpose flour
2 eggs
1/4 cup milk
1/4 cup buttermilk
1 cup panko bread crumbs
vegetable oil
parsley
fresh basil
1/4cup parmesan cheese

INSTRUCTIONS
because the salad needs to be refrigerated before consuming, start by making it first.  this is super easy.  first, clean the tomatoes.

and cut them into bite sized pieces

do the same with the mozzarella cheese

add the cheese to the tomatoes

chop up some basil and add it to the tomatoes and mozzarella

this basil is from the basil we are growing on the windowsill.  it is absolutely fresh since i picked it 2 seconds before chopping it up!!

season the mixture with salt, pepper, olive oil and balsamic vinegar - mix well

cover and throw it in the fridge. you can eat it as soon as it is prepared, but i find that once you wait a while the vinegar gets into the cheese and tomatoes and the result is simple and delicious.

ok, clean up the work station and then let’s start with the turkey.  in a bowl, mix together the panko, with parmesan cheese, salt, pepper, chopped up basil and parsley

in another bowl mix together the buttermilk, eggs and milk.  stick the turkey breast in a ziplog bag and pound them out with a hammer or mallot. the idea is that they are thin enough to cook quickly on the oil.

repeat until all of them are done

heat up about a cup of vegetable oil in a skillet

spread some of the flour in a plate and set up your assembly line: flour > egg/milk > panko > oil > plate > mouth!

first, coat the turkey in flour

then coat it with egg/milk/buttermilk mixture

get rid of any excess egg/milk

and finally, coat the turkey with the panko mixture. 

make sure it is thoroughly covered in panko deliciousness

fry it in the hot oil until golden brown on each side

and turn it over

repeat with the rest of the turkey

serve with the salad and enjoy!
