
the irishman has been working late a lot lately, so i have been cooking heartier meals to keep him going… and also so i can have an excuse to eat a ton of pasta and steak (recipe soon). i made this linguine on one of the off cool nights we’ve had this summer. it was a simple enough recipe that i was able to make it during the week and not stay up too late. i have to admit, it is not the healthiest of recipes…on the contrary - it has a ton of bacon and half a stick of butter so read at your own risk. the trick with this dish, is to eat it with moderation - but you will see at the end of the post… moderation was not on my agenda.
anyway, here it is: linguine carbonara!
INGREDIENTS:
1 box of linguine
1lb of bacon
1 large white onion
1 medium head of garlic
a handful of fresh parsley
4 eggs
1 can of chicken broth
white wine
1/2 stick of butter
parmesan cheese
salt and pepper

INSTRUCTIONS:
set some water to boil. chop up the bacon into bite size pieces.

cook the bacon on a skillet in medium heat.

move onto the onion, chop the whole thing up. and set aside.

check on the bacon

almost there, keep a close eye on the bacon. no burnt bacon over here. this is how the bacon should look:

at this point, use a ‘holy spoon’* to drain the bacon onto a plate.

now, do not get rid of the stuff left over in the pan

cook the onions in it instead!

while the onions cook, clean and chop a 8-10 cloves of garlic. i used a whole head of garlic.

once the onions start getting translucent, add the garlic to the skillet

if the water is boiling…

add a sprinkle of salt and the linguine

once the onions and garlic cook, drain them and put them into the plate with the bacon.

yum!

now, get rid of the bacon and onion remnants. just pour the liquid out don’t scratch the skillet just yet.
return to the fire and pour a cup of wine on it (or chicken stock if you don’t drink wine). be careful when pouring the wine, it may ignite so if you want turn off the fire while you pour.
using a fork or a whisk, scratch the bottom of the pan clean. once done, add the can of chicken broth (sorry no good pics, i was moving really fast) and the bacon and onion/garlic.

cover and cook on medium low heat.
check on the pasta, if it is cooked drain and get ready to assemble everything

crack the eggs into a large bowl

make sure it is a large enough bowl to mix everything in.
rough chop a handful of garlic. add a cup of parmesan cheese and the parsley to the eggs.

mix that well

add the linguine to the egg mixture. make sure the linguine is really hot since that is what will cook the eggs.add half a stick of butter… yes, half a stick.

add the bacon and onions with all the broth.

season with plenty of pepper.

mix everything well. make sure the linguine is completely coated.
serve and top with parmesan cheese and fresh parsley.
