
hi! yes, i know, i know. i haven’t posted in a long while. i am so sorry! my computer is on its last days and i cannot post from it anymore. i am mourning its slow and painful demise. but that does not mean i’ve stopped cooking. i made this steak a few weeks ago when my brother came to visit me. he was showing me how to use the new camera and in return i made him steak with chimichurri sauce.
i had never made chimichurri sauce before, actually, up until a few years ago the only chimichurri i knew was the dominican sandwich. you can imagine my surprise when i found out that in argentina they have this delicious sauce with the same name. of course i had to try it right away. the first time i had it was at a restaurant in the inwood neighborhood of manhattan. as soon as i tasted it, i knew this sauce will have to reappear in my life some more. so here it is, my take on chimichurri sauce!
INGREDIENTS:
1 garlic clove
the juice of 2 limes
a handful of basil
a handful of parsley
dried oregano
dried thyme
2 whole shallots
*red pepper flakes
1/2 cup of olive oil
salt and pepper
for the potatoes:
6-7 white potatoes
olive oil
seasoning miz (i used montreal steak)
paprika
*optional

while researching chimichurri sauce i found that there are a bunch of variations on this sauce. the one i made is compiled from a bunch of the ingredients i found would work best and what i remembered from tasting the sauce. i also found out that apparently this sauce was created by an irishman named jimmy mccurry - of course my irishman is very pleased with himself after hearing that fact. hahahaha.
anyway, so this is so easy to make. yes, i know i say that on every recipe i write but i am serious, so easy!
start by rough chopping the basil.
and the parsley

mince the garlic

and the shallots. i had never worked with shallots before this, i am so happy i did!

throw everything on the blender along with a tablespoon of thyme, salt and pepper, 1/2 teaspoon of red pepper flakes, a sprinkle of oregano, the juice of two limes and add gradually 1/2 cup of olive oil. don’t add it all at once so it doesn’t end up tasting too oily.

using the pulse option on the blender, mix everything together until you get an even textured sauce. if it tastes too oily just add more fresh lime juice.

pour the sauce on a glass or stainless steel bowl and let it rest at room temperature for at least an hour.

now, clean the potatoes and cut them into fries (chips). i left the skin on because i like that sort of thing, but you don’t have to.

drizzle the potatoes with olive oil and season with the paprika and the seasoning mix. if you don’t have seasoning mix, mix together in a ziplock bag: onion powder, garlic powder, oregano, cayenne pepper, salt and pepper to taste.
place the potatoes in the oven at 400 degrees for 20 minutes or until fully cooked.

clean and dry the steak. season with pepper and place on a baking sheet. cook in the broiler for 3 minutes on each side for a medium steak, for a well done steak cook for 5 minutes on each side.
make sure to open the windows so the fire alarm doesn’t go off.

once everything is cooked place on a plate. spread 1-2 tablespoons of chimichurri over the steak and enjoy.

i remembered i had some leftover mozarella/basil/tomato salad in the fridge so i added that to the plate.

the chimichutti sauce was so spicy and tangy. it was a great complement to the steak. everyone should have some chimichurri in their lives! this goes well with steak, chicken, seafood and veggies. hope you try it!
