
this week i posted about the parsnip fries, they went with my basa fillet with leek relish for a healthier version of fish and chips. today i bring you the relish recipe. it is incredibly quick and easy to make.
here is the recipe for basa fillet with leek and white wine relish!!
INGREDIENTS:
1 leek
2 tbs butter
salt and pepper to taste
1/4 cup of milk
1/4 cup of white wine (optional)

INSTRUCTIONS:
start by thinly slicing the leek. wash them well to clean out any dirt that might have gotten stuck between the layers. i use a strainer to wash my already cut up leek, that way i can use as much water as i want without wasting any leek pieces and i am sure that i get all the dirt out that way.

next, melt the butter in a saucepan at medium heat.

toss the leeks in the butter to coat them well. when cutting the leek just use the light green to white parts. the dark greek part of leeks is bitter and yucky.

once the leeks start to wilt, season with salt and pepper.

and add the milk.

stir the leeks around. if you are using wine add it once the milk has incorporated to the leeks. i used a sauvignon blanc i happened to be drinking at the time.
a good rule of thumb when using wine in cooking is: if you want the taste of wine to be subtle, add the wine at the beginning of the cooking process; if you want the wine flavor to be more pronounced then add it towards the end.
i wanted to be able to taste the wine, so i poured it at the end and turned off the stove once most of it had been cooked off.

the fish was the easiest part of this meal. i just coated the fillets with olive oil on both sides and seasoned with salt and pepper. i used basa fillet because that was what we had in the market but any sturdy white fish works.

bake the fish at 350° F for 8-10 minutes, or until you can easily flake with a fork.

the fish’s flavor and seasoning was mild enough that allowed the leek relish to shine. the relish had a very strong leek flavor which is oniony and sweet. the wine added a nice dry undertone that complemented the leeks and the fish.

this was definitely a great dinner. one of those dinners to make when you want to impress someone but do not have the time or energy to cook a labor intensive meal.
