mojitos

the recipe i am posting after this one called for mint leaves.  i bought a bunch at the supermarket and even after using more than half i was still left with a sizable hndful. not wanting to waste food i figured i should use as much of the mint i could in any way possible. it was a really hot summer night (we are having those a lot, ugh!) and i wanted something refreshing.  i figured a mojito would do the trick. 

the mojito comes from cuba; understandabble, since it is very hot there as well.  did you know tha it was ernest hemingway’s favorite drink?  even made a place called ‘la bodeguita del medio’ famous by becoming one of its regulars.  he wrote on the wall ““Mi mojito en la Bodeguita” (My mojito at the Bodeguita)” which still stands today. 

the seltzer water, combined with the mint and lime makes for a very refreshing treat.  there are many variations of the mojito, but my favorite is still the original mint one.

so here it is, my try at the cuban mint mojito!

INGREDIENTS:
2 limes, cut in quarters
white sugar
a bunch of mint leaves
seltzer water
white rum (i used bacardi, which is what we had but any white rum works) 

INSTRUCTIONS:
traditional mojitos are prepared and served in highball/collins glasses but they are not a necesity when making them at home. mix 2 quarter pieces of limes, 4-6 mint leaves and a teaspoon of sugar in a glass.

muddle them well to allow the limes, mint and sugar become a delicious syrupy concoction.

taste it when everything is mixed well.  add more mint, limes, sugar if necessary.  now, add 3 oz of rum, or you know… a splash.  if you do not drink alcohol, just skip this step.  the non-alcoholic mojito is called a nojito and it is very refresing and yummy as well. 

top with the seltzer water.

and mix well.  enjoy outside on a warm summer night.
