steamed mussels with white wine, thyme, parsley, butter, garlic and leeks!!

today’s post is the last recipe from my summer seafood fest with tom.  it is also appropriate since summer is on its last legs and steamed mussels is a quintessential summer dish.  this recipe is for steamed mussels with white wine, thyme, parsley, garlic and leeks! 

if you have been reading for a while you know that is not my first try at using leeks. i have used leeks a few times before and i love them.  the leek flavor is a bit subdued in this dish but it is definitely still present.  i used a chardonnay for the white wine. the same kind i used for the white sangria

but enough chat, here it is… the recipe for steamed mussels with white wine, thyme, parsley, butter, garlic and leeks!! 

INGREDIENTS:
2 lb of mussels
extra virgin olive oil
2 tablespoons of butter
2 leeks
6 garlic cloves
fresh thyme
a cup of white wine
1/2 cup of fresh, flat leaf parsley  

INSTRUCTIONS:
start by cleaning the mussels.  make sure to wash them throughly and remove the mussel beards and any bit attached to them.  throw out any cracked mussels.

next, chop up the leeks. just use the white and light green parts of the leeks.  make sure to wash them well because sometimes dirt likes to get in between the leek layers. 

mince the garlic and give the parsley a rough chop.  remove the thyme from the stems before using.

heat up the olive oil and butter together in a large pot. that’s right, this dish is so delicious it needs both olive oil and butter!

once the butter has melted, add the garlic, parsley and thyme. stir around. 

and add the leeks. 

turn to mix everything well. 

cook until the herbs turn into a mush. yes, you read right - a mush!

add the clean mussels to the pot. toss everything together. 

add the white wine and cover.  cook on medium-high heat for about 10 minutes, until all the mussels have opened up. 

serve with fresh parsley and toasted bread to soak up the sauce.

the combination of leeks, parsley, white wine, garlic, thyme, butter and olive oil make for a delicious sauce! 

and as you saw, this recipe could not be any easier.  an easy and delicious one pot dish! 

this was the perfect main dish for our summer seafood fest!
